Once October hits Avery Island, there’s only one thing on everyone’s minds: mashing season! To celebrate Tabasco’s yearly pepper harvest, we brought the home of the world’s favourite hot sauce to London.
Upon arrival journalists and representatives from the food industry and media were greeted by ‘The Feast’ – a room dressed with banquet tables groaning with food. In the garden the guests found themselves transported back in time at ‘The Fayre’, where they could play ‘Ring Toss’ and ‘Guess the Weight of the Goat’ games. Moving upstairs landed the travellers right on ‘Avery Island’, where they were met with a barrel bar commandeered by a member of Tabasco’s founding-family, who put on a traditional pepper mash tasting session.
The Avery islanders were kept fed with everything and anything containing Tabasco. The main consisted of a delicious smoked pulled goat and a choice of two crayfish boils, served in true Louisiana style – bibs and all. And for dessert? Bourbon, bacon and cherry brownies.
All cocktails were specially designed to contain one of the Tabasco flavours. Guests sipped on the bespoke Pure Sanga, Spicy Gin & Tonic, Michelada, Pickle Back and a punchy Autumnal Pumpkin Cocktail which they could have a go at muddling themselves.
